Crispy Rava dosa

Ingredients 
Rava - 1cup
Rice flour-1 cup
Maida-1/2cup
Water-required to make the batter
Salt- as required 
Grated ginger- 1tbsp
Chopped green chilli-3tbsp
Curry leaves- few
Chopped coriander leaves-handfull
Onion-1no ( chopped finely)
Jeera-1 tbsp
Whole peppercorns- 1tbsp
Hing-1/2 tbsp
Oil- for roasting dosa
Method
•In a large bowl add in maida, rice flour, rava, salt. Add water and make it to a very thin batter , mix it well with whisk without any lumps (it should be in a thin buttermilk consistency)
•Now add the other ingredients and mix well except onions
•Set aside the batter for 15mins
•Heat the dosa tawa (tawa should be hot but not smoky)
•Sprinkle some oil in the tawa and add the chopped onions evenly throughout the tawa, wait for few seconds till the onion gets golden brown( if u want to make it quick just avoid this step,add the onions into the batter itself. I do this just to get the roasted onion taste in the dosa)
•Before pouring the batter, mix well till the bottom as rava will settle down at the bottom of the vessel,incase if it is thick add some more water as rava absorbs water.so mix well before making every dosa
•Now take a laddle full of batter and pour it around the tawa , do not spread the batter with laddle,start from the edges and move towards the centre.Just pour it thinly here and there to fill the gaps
•Drizzle some oil and cook for a minute till the base is golden crisp then flip the dosa and cook for another one minute.
•The more you cook ,more crisp it will be
•Dosa is ready to serve
