EGGLESS VANILLA CUPCAKE

Ingredients
Maida -1 cup(including 1tbsp cornflour)
Sugar- 1/2 cup
Warm Milk- 3/4cup
Melted Butter(unsalted)- 3tbsp
Vanilla essense -1/2tbsp
Baking powder-1/2tbsp
Baking soda-1/4tbsp
Vinegar/lemon juice- 1/2tbsp
Salt - a pinch

Method
✓Measure 1 cup of maida and remove 1tbsp of maida from the measured quantity, then add 1 tbsp of cornflour to it and mix evenly
✓Seive all the dry ingredients(except sugar) together and keep it separately
✓Mix half tbsp of vinegar or lemon juice to the milk and keep it undisturbed for few minutes
✓In a mixing bowl add sugar, vanilla essense, butter and mix evenly until it becomes creamy
✓Now add the milk(it looks curdled) and mix well till the sugar dissolves completely.
✓Slowly add the dry ingredients in small batches, mix without any lumps
✓You will get a creamy batter,do not over mix them
✓Now mix a handfull of chopped cashew and badam to it or u can even add chocochips
✓Preheat the oven at 180°c
✓Grease the mould with butter or oil ,i used silicone moulds so i just greased it with little butter,place it in a baking tray or muffin tray.If using cupcake liners just arrange it in the muffin tray.
✓Fill 3/4th of the cup with the batter. Dont fill it up fully as the cupcake rises and becomes fluffy

✓Garnish with some nuts or chocochips on the top.
✓Bake for 25mins , insert a toothpick to check whether the cake is done or not. adjust the time accordingly, plus or minus 5minutes it depends upon the oven

✓Wait till it cools down completely then transfer it to a plate
