Mushroom briyani

 I have made this recipe in my own style 
 Hope you all will love it 

Servings- 4

Ingredients 
Basamati rice -2 cups
Water-3 cups
Mushroom- 1 packet
Onion-2nos
Tomato-3nos
Mint&coriander-1handfull
Vegetables (carrot,beans,potato,peas)- 1cup
Greenchilli-3nos
Garlic-7-8nos
Ginger-small piece
Turmeric powder-1/4tbsp
Chillipowder-2tbsp
Dhaniya-1tbsp
Garammasala-1/4tbsp
Briyani masala-1/2tbsp(optional)
Curd-1spoon
Salt-as required
To grind
Garlic-3nos
Ginger-small piece
Greenchilli-1
Small onion- 4-5nos
To temper
Oil-3tbsp
Ghee-1tbsp
Bayleaf-2
Cinnamon-1 inch
Jeera-1tbsp
Fennel seeds(sombu)-1/4 tbsp(optional)
Cardamom -1
Cloves-1
Method
•Wash the basmati rice and soak it for about 30mins
•Clean the mushrooms and cut it into two halves
•Heat oil and ghee in the cooker add all the spices mentioned under to temper
•Add the garlic pods and green chilli , add thinly sliced onion , add some coriander &mint
•After onion turns golden brown, add the grinded paste and cook until the raw smell of the paste goes
•Now add the chopped tomatoes after it turns mushy add all the spice powder
•After the oil oozes out add a tbsp of curd and mix well
•Add the mushrooms and all the veggies, give it a mix
•Add 3cups of water and allow it to boil,then add required salt
• Add the basmati rice,switch to highflame& wait till all the water evaporates ,stir occasionally until the water reduces(doing like this reduces the cooking time and rice in the bottom 
wont be burnt)
•Now 60% is almost cooked so reduce the flame to low,add mint, coriander, a tbsp ghee
and close the cooker
•Cook for 10-15min or wait till one whistle
•Once the pressure is released , transfer  it to a serving bowl

Serve with any raitha! 😃 perfect for lunch🍴
This is my way of doing briyani
You can do the same way for any briyani u prefer to do.
You can also add any vegetables of your choice, if u want it to be plain you can just add only mushrooms to this briyani. To make it wholesome i have added veggies.
